Salomon Winery is a small family winery in Moshav Amikam. Itamar Salomon, a native of Kibbutz Amikam and a longtime fruit and vineyard farmer, began making wine in his home cellar in 1997; after the home winery passed about 1,000 bottles around 2000 he formalized it into a family business (some directories date the formal opening to 2002). Every step, from harvest to bottling, is done by family members: Itamar, his wife Chiaki (from Japan) and their children. The grapes grow on limestone soil along the banks of Nahal Taninim, which is why the estate calls itself "the winery by the stream." The lineup is reds from Cabernet Sauvignon, Merlot, Cabernet Franc and Syrah/Shiraz (the Cabernet Franc is sold on its own), and the official site also lists Chardonnay among its grapes; no single flagship is named. A visit is a wine tasting with a cheese platter in the winery courtyard plus a tour, and suits couples, families and groups.
