Assaf Winery sits in Kidmat Tzvi in the Golan Heights. The Kedem family established it in 2004: Assaf Kedem began his wine journey at age 50, having earlier founded the Bazalat HaGolan winery in 1998 and made wine from the family vineyards starting in 1997. It is a hands-on family operation — Assaf and his son Oren (who trained at the Michel-Schlumberger vineyard in California's Sonoma Valley) make the wines, mother Hadassa handles hospitality, and eldest daughter Adi, a chef trained at FCI New York, runs the on-site Didi's Kitchen / AdiKa Café. The winery is the heart of Kedem Wine Village, described as a first-of-its-kind agritourism wine village in Israel. The estate occupies an ancient stone building on Route 91, with a barrel room, tasting rooms, a café and rustic guest cabins. It produces roughly 55,000–60,000 bottles a year from about 15 acres of self-harvested family vineyards at 500–890 m altitude. Flagship estate wines come from Cabernet Sauvignon (including the MOISE series, 100% Cabernet), Shiraz, Zinfandel, Pinotage and Cabernet Franc, plus whites Sauvignon Blanc, Chenin and Pinot Gris. There is also an 8-year barrel-aged brandy (released 2022). The wines are noted as vegan-friendly. Visitors can choose wine tastings, guided winery tours (production facility and barrel-aging room), or the signature "Wine to Table" experience: a tasting plus local cheeses in the courtyard, a winery tour, then 7–8 local tapas from Didi's Kitchen with unlimited wine, hot drinks and dessert (around NIS 265 per person; Sun–Thu from about 12:30pm, advance booking required). The AdiKa Café / Didi's Kitchen also runs as a walk-in deli serving sourdough breads, brioche, tapas, smoked meat, pickled fish and local goat cheese.
