Bahat Winery is a family-run boutique winery in Kibbutz Ein Zivan in the northern Golan Heights. It was founded by Ofer Bahat, a fruit preservation and cooling expert who pursued winemaking as a long-held dream, starting out in a shed with borrowed equipment. The first wine was produced in 2007. The grapes come from the Quneitra Valley and the foothills of Mount Bental, grown in volcanic soil more than 1,000 metres above sea level. The operation is small — about 20,000 bottles a year. Grapes and wines named on the official site include Cabernet Sauvignon, Merlot, Shiraz, Sauvignon Blanc, Gewürztraminer, a rosé and a blend; secondary sources also note a port (first sold around 2017) and a Cabernet Sauvignon–Shiraz blend. A distinctive feature is the grape-based liqueurs (for example cherry and blueberry), made on site in a copper still. The visitor center has about 100 seats, a wine bar and guided tours of the production facility, barrel room and distillery, ending in a tasting. A tasting typically covers around six wines (red and white) plus liqueurs, served with cheese and bread. There is an on-site dairy restaurant with breakfast, cheese platters and wood-fired pizza, and an alcohol-free children's workshop (ages 3+).
